Thanks, your genius solution worked for my new iPhone 7+. Had noticed the same issue when i updated it to firmware 10. Followed your instructions of un-muting from the Assistive touch button and now sound clicks are back on track.
I’ve noticed it happens after playing music or a video or a notification just simply any other type of sound that is not the keyboard click. Hopefully will be fixed with upcoming iOS updates. But for now just hard resetting your iPhone will help. I thought it was a problem with my phone but I just got the 8 plus and still same problem so it’s a software problem.
The keyboard click volume is the same as the music volume from the music app. If you increase that volume, it should increase the volume for your keyboard. You can only do this when in the music app.
No it's now working for me. Even though I increased or decreased the volume in music app, it's not changing the volume for keyboard click.
Try a reset on the phone. Hold the sleep/wake and home buttons together until you see the Apple logo and then release. This will not affect your data. The phone will reboot.

OK one thing I have figured out.
If you go to
Settings > Sounds > Change with Buttons > ON
Then go into the Notes app and click away. While you're clicking, toggle the volume rocker on the side of the phone up and down and you will notice there is a change in volume of the clicking sound.
So apparently the volume is changeable, but for me, it's just not loud enough to a desired volume.
There are times when the audios overlap, for instance, the keyboard clicking sound and message arrive notification, and for that split second the keyboard click volume is super loud. I wish the setting could adjust the keyboard click volume all the way up to that volume.
I just checked with my ipad and the iphone 6 plus that I have is just a tad bit quieter. Understandable, since the speaker of the phone is probably smaller than the ipad's, but still left with wanting a bit more volume.

I updated my iPhone 6 Plus to iOS 8.3 and lost both Lock Sounds and Keyboard Clicks. I tried resetting all and it still doesn't work. I'm trying to avoid doing a restore.

I have the same problem. The internal speakers work fine, so does the headphone jack. No keyboard clicks, no shutter click, no power down click. I've tried all of the suggested remedies. Guess I'll go down to the Apple Store tomorrow and have them shrug their shoulders along with me.
At least you can find an authorized service to resolve that ! issue...In Kuwait, difficult to believe in, there is no authorized apple service center !!
resellers are giving a stupid answer "noo....it's normal"...you are paying a fortune for the device and you should run after forums ! etc...!shame on you Apple !
Same problem. Keyboard volume is stuck at a low level. Changing the media volume has no effect. Even with the media volume muted it still clicks! Only the silent switch stops it.

First turn on Assistive touch. Go to Settings -> General ->Accessibility -> Assistive touch ->on

wrong don't work, it's a Apple issue since iOS 8 started!! After 5 years I'm done with Apple for good, going to move to a better device like OS!!
