How do I get my maps app out of "Night Mode" and back to looking normal (it looks blackened or Greyed) on my iPhone 5s iOS 8 ? The only way it's normal is if I "Start" the guidance which runs the battery down faster. I usually follow the "Route". No "Guidance" voice.

I have exactly the same problem on my iPhone 5S : maps is stucked in night mode with black maps background since the upgrade.
I'm unable to switch it off :-(

I have given up on the app and am using Google maps app. The only drawback is you can't see a list of your directions, only an overview. At least I can now read the street names!
I had the same problem. Stopped by Apple Store today and they helped. Had to "Reset All Settings."
Settings --> General --> Reset --> Reset All Settings
That fixed it for me. Good Luck.
