Q: how do I delete an iCloud song from my 5s phone

It sounds like you are needing to delete a song from your phone. If it is downloaded you can do it thusly:

How to delete content you've downloaded from the iTunes Store, App Store, iBooks Store, or Mac App Store

iPhone, iPad, or iPod touch

 

1. Tap the Music app.
2. Tap the Songs category.
3. Swipe left over the song you want to delete.
4. Tap Delete.

If you ar seeing it in your music library with a cloud icon next to it, you can hide these files by disabling Show All Music:
