Check out the article below for issues with using AirPlay on your iPhone. It will have you look at some settings as well as looking for any interference that may be causing AirPlay to stutter.

Sep 28, 2014 12:54 AM in response to norm123by DaveGarratt,Thanks for the link but I'm sure it's IOS 8 related. I have 2 theories. Something has been changed on the networking front as a lot of people including me are finding that they cannot sync iTunes wirelessly since IOS 8 update - possibly OSX 10.9.5 as well. I have a number of AirPort Express units and I think the problem is that either the phone is no longer roaming properly, or it's having problems discovering other AirPort devices which exist, other than the wireless AP which the phone is connected to. I have found that when I turn off Wifi and turn it on again, forcing the phone to look for the best signal it finds the closest AirPort Express (which is the one I want) and then it works fine.
As for the stuttering this would appear to be a multi tasking issue and it seems to coincide with the email client looking for or downloading emails. I have also noticed that in some cases the next track/previous track buttons are very hard to use on screen - which would also seem to indicate that the phone is not picking up on every event.
I may do a full reset when I have time, but for not I think I will wait for an update from Apple.
Dave
