IOS 8 won't let me "pinch in" to close my email app on iPad 3, unless I'm in portrait view (iPhone view). If I am in landscape view, "pinch in to close" does nothing, so I have to rotate my ipad to a portrait view, then it works. This is not the behaviour that was in ios 7 or previous.
Anyone else having this or is experiencing this?

I checked my iPad 4 running IOS 8.0.2 and it pinched closed in either view. Try a reset. Press and hold both the home and power buttons 10-15 seconds till the Apple logo appears. Release both buttons. Wait 15-20 seconds till your iPad starts on it's own.

IIt is still continually doing it. I don't want to continually do what you suggested, which is the equivalent of a Microsoft reboot...I want Apple to recognize the problem and fix it, if others are experiencing it. The problem always happens in landscape view of my email - I cannot pinch it closed until I rotate the device to portrait position. Very annoying.
You could just tap the home button to close the mail app. My email still works fine, you need to tell Apple directly if you think it's a problem that needs solving. Use the link below.
II'm having similar issues on my iPad air. Pinch close will work for a bit then stop until I reboot. Only happened after I upgraded to 8.02
This is a known bug in iOS 8. To temporarily fix it pull down notifiction center, then Swipe it back up. For some reason it reactivates the Multitask Gestures. You can always send Apple feedback. www.apple.com/feedback/

after ios8 download, I've problems to receive mail. It's impossible read mails because it says me "no sender", while I see the message but I can't read it.
It's the same to my iPhone 4s and iPad2.

EAsier way is to go to settings, turn off pinching and turn it back on again. Voilà...it works again.
this is continually happening and is a chronic problem for me. Very disappointed and hope enough people report this so I get my issue fixed in a patch.
Not working for me still a chronic problem.
Until it's fixed you can always use the Hey Siri feature. Just say "Hey Siri open Notes" or whichever app you want.
