I have a mac and iphone, how do I sync my mac documents from pages, keynote ect... to be able to see them on my iPhone?

That will depend on your system versions. Which iOS version do you have on your iPhone, and which MacOS X version do you have on your Mac?
With iOS 7 on your iPhone and MacOS X 10.9.5 (Mavericks) you can save documents in the cloud. The Finder will show you iCloud as a storage option, when you save or open documents in Pages, Keynote, ... and your iOS devices can open them.

If you have upgraded your iPhone to iOS, don't enable iCloud drive. It will disable the ability to use documents in the cloud.

I have IOS 7.1.2 on my phone, and when i try to update to iOS 8 it says my software is up to date with the 7.1.2 😟 so i can't get my documents on my phone

Click the -icon in the upper left corner of the screen and use the menu item "About this Mac". It will tell you the version number in the "About" panel.

With Mavericks 10.9.5 on your Mac and iOS 7.1.2 on your iPhone the versions do match perfectly for "Documents in the Cloud". Have you updated to the newest versions of iWork?
When you create and save a document in iWork, click the cloud icon to save it in the cloud.
On your iPhone the corresponding app will let you select the document when you launch the app.
I don't have any apps on my phone? Not sure what you mean. I tried downloading pages but it says i have to have iOS 8.
