Q: How do I disable Airplay on my iPhone 5S running IOS8?
I do not use Airplay and I connect to my TV using the AV adapter cable. Some apps won't play videos if Airplay is enabled on my iPhone. A message pops up telling me "This video won't play with Airplay enabled. Please disable Airplay and try again" Does anybody know how I can disable Airplay on my iPhone? The Airplay icon does not show on my control panel and I can not find anything in setting that lets me disable Airplay.

If you don't have an Apple TV, or any other AirPlay-capable device on your network, this message may not actually have anything to do with AirPlay. What you're seeing could be the app you're trying to use not allowing you to send content over HDMI (nor AirPlay) but the app only has one error message to put out. So even if AirPlay is not being used, the app just has one way to tell you that it can't send its output to any other device (which is common).
Also, just to note that the Apple TV's setting for AirPlay has nothing to do with the Apple TV serving as an AirPlay receiver. Rather, this Apple TV setting is used for using the Apple TV as a source to send its audio out to an AirPlay capable audio output.
