You have to change your region in the settings, example from US to a region where they use metric system... Not intuitive and practical.
Health Kit should allow users to change between metric and US/imperial measurements, even if the region setting has a default. While technically Canada is metric, we're bilingual when it comes to measurements for health and fitness - ie, while most would think in km for distances, lbs and feet/inches are most commonly used in body measurements. Apple needs to allow this to be modified as MyFitnessPal, which lets you choose different weight/height/distance measuring systems.

Submit your feedback directly to Apple using the appropriate link on the Feedback page: http://www.apple.com/feedback
Health Kit's not listed on the Feedback pageyet.
Then your best bet is to provide feedback to Apple so they know how you feel. Go HEREand then click on the appropriate link.

As it's part of the OS, you can chose that. As long as you're clear in your comments what your feedback is, Apple will understand.
Another option is to use an app like Weight Tracker for HealthKit to enter your weight in either kg or lbs.
