Turn it off in Settings > Mail, Contacts, Calendars >Contacts > Show in App Switcher
You have the option to display Favorites, Recents, both, or none.

Holy crap; I've had to keep looking at my best friend, who killed himself last summer, several times a day, re-breaking my heart, over and over and over until I feel sick. I couldn't figger out how to turn that off to save my life. Came here to ask how to make it go away. Thanks ever so much for this solution. I wish I could kiss you.

You're welcome, but your issue might be different. If you're seeing recent messages from your son, you are probably still using his Apple ID on the device which is going to cause a whole host of other issues. You should reset the device and use your own Apple ID for messages.
