What do you mean by "iTunes U search engine"? Some possibilities:
- student searching within iTunes U for iOS in the materials list for a particular course
- students searching the iTunes U storefront (via iOS or iTunes for OS X / Win) for a class they are interested in subscribing to
- teachers searching the materials lists in the courses they're teaching
Further, what do you mean by "tagging"? Embedding keywords in the mp4 file? Something in the markup on Site Manager? Vimeo or YouTube tags?
If you can provide steps that assume we've never used the application before, we can better help you.

I want to make sure that when someone types "rocket surgery" for example in the search box in the upper right hand corner of iTunes, that my video Adventures in Advertising, which features rocket surgery comes up in the results of the search. So the question is how do I tag the video file as having content about rocket surgery. This is an educational series in the "Beyond Campus" category for marketers and marketing students and features topics across the marketing spectrum and by industry experts and I want to ensure that anyone interested in that subject matter can tape into their knowledge.
That said, I believe tagging (seems to be interchangeable with metadata) is the following (Apple provided):
- Pay close attention to the title, author, summary, and keywords tags at the item and collection levels of your feed because these are the fields that iTunes indexes for search. This metadata—along with your art—is your product packaging. It affects whether your content shows up in relevant searches and determines whether users who find your content are likely to click the Subscribe button.
I hope this clarifies. Trying to create searchable content in iTunes U course creation is challenging for me because I find the documentation confusing.
