There is no "iPod" pane in the Preferences menu of iTunes. How can this be fixed?

Click on the iPod's name, in the Source pane on the left of the main iTunes screen - all your iPod preferences are now to be found there.
Not to ask a stupid question, but is your iPod connected to your computer? You have to be docked to the computer for the iPod preferences to show up.
Source? to the left of the main iTunes screen I see Library, Store, Devices, and Playlists.
In the case of Devices, my iPod is listed underneath, but that only lists the playlists on the iPod. A right click on the iPod name yields:

Hehe, yes. It is connected to the computer. It shows up under "Devices" and the iPod screen is flashing the "Do not disconnect" message.
What you're seeing is correct, but you don't need to right-click, any click will suffice - with the iPod's name selected the main screen should change to display the iPod's current settings (even with a nice big illustration of your iPod!).
Headings down the side labelled "iPod" (listing the serial number etc.), "Version" (covering iPod software & updates), "Options" (how your iPod interacts with iTunes). Headings across the top of the screen labelled "Summary", "Music", "Podcasts" and so on. Are you not seeing that..?
