My wife was the first in the family to get an iPhone 6 and to get going with iOS8 we like the family calendar sharing but she doesn't want to be the family organizer that gets notified about every purchase. We want to change that role to me. How can we do that?

As I understand it, your wife initially set up and is the organizer of the Family Sharing group, but no longer wants to act as the organizer or receive the notifications on purchases. To achieve this your wife would have to disband the family group and have you start a new group as organizer. Here is an article on how to have her disband the family group:
