I just stuck a 3 TB drive in a PowerMac 7,3 (although I think from 2003) and it isn't playing well with its new cellmate. Wiping the drive is proving to be more difficult than it should. Having to do a Zero overwrite to get it to format -- and even then that is "iffy."
I say try it.
(In theory this should work no problem.)
Two caveats, the drive has to be SATA 1.5 Gb/s compatible, or you must have a true SATA 1.5 Gb/s drive in slot zero & a SATA 3 Gb/s drive in slot 1.

Note, drives over 2.19 TB must be formatted & partitioned GUID, which means they will NOT be bootable.
Hi, 3 TB Drive will not be bootable on a G5, 2.19 TB is the limit for Apple Partition Map.
I had drives from 500GB to 2TB in my G5.
