This is all well and good and everything, but I would like to be able to do this in the newest version of iTunes (12.0.26). If it cannot be done, how do get the old version back?

Yes iPod touch 4th generation is supported in iTunes 12.0.1.26 using Manually manage music & videos.
Thank you! I finally figured it out! They changed back to the old way where the iDevice is listed in the side bar. I was so totally confused for a moment! :-D I guess I just got really used to the way it was before this new update.
