- the tracks on the CD are sorted in ascending track order
- you have selected two or more consecutive tracks - i.e., the option will be there if you select tracks 2,3, and 4 but not if you select 1, 3 and 5. If you want to join all the tracks you must select them all (Ctrl-A).
It is something of a mystery, though, why Apple chose to remove this function from the UI when it is not available, rather than leaving it in the Options submenu and greying it out.

Feb 10, 2015 11:58 AM in response to hhgttg27by Razgut,That's the weird thing, it's not greyed out - it's just gone period. Worked last week fine. The system has been a bit slow as well. Don't know if that's related and iTunes got corrupted or something. Without that function iTunes is useless to me. I use it only for audiobooks.

The option should be there. In the current build the option is suppressed, rather than greyed out, when it cannot be used.

This function just quit in the middle of my importing a series of CDs. It had worked up until then. I then tried installing then newest version of iTunes and it still doesn't work!

Feb 28, 2015 1:44 PM in response to turingtest2by hineshorn,OK; that did it! I had clicked the column above the track names, which also showed the little chevron pointing up. What a stupid and obscure way to control that function. Apple help does not mention that distinction.
