How do I use my iPhone 5 just like an iPod without cellular service? When I tried to setup the iPhone 5 with my daughter's Apple ID, it kept wanting to communicate or message via my old phone number. If I go forward with this setting, I'm afraid it may move my phone number from my new iPhone 6 Plus this old iPhone 5. I do not want that. I just plainly want to use it as an iPod with WiFi capability.

I tried that but when I signed in with the new apple id, it wants to activate or send all communications back to my old cell phone number. Again, I am not sure if this will reactivate my old iPhone again.
What SIM card are you using in the device?
After the restore set the device up as new with your Sim in it so it will activate. When it asks to use your Apple ID or to create new Id simply skip this step, should be highlighted in blue. Once you get to home screen you can then remove your SIM and set up iCloud and iTunes with Her Id over wifi
