If I upgrade my itunes to 12.0.1, will it read my ios 7 device? What past ios versions are compatible with the said itunes version?

Of course it will work. It's compatible with versions of iOS.
So older versions of iTunes will not read new iOS updates, but the latest version of iTunes can read lower iOSs.
