It seems (as someone posted here) that the problem is in the Facetime app itself which, connected to Apple TV, doesn´t support landscape mode in iPhones.
So, it´s up to Apple to fix it (I wonder if they are aware of the issue).
Meanwhile I´m using the app LINE to enjoy video-conferences in full landscape mode in the TV screen, which works just fine and with good image and sound quality.

- Comments: When sending an iPhone FaceTime call to an AppleTV via AirPlay, the AppleTV will not display the FaceTime call in a horizontal/landscape orientation, regardless of how the phone is held.
Holding the iPhone vertically displays correctly on the television; however, rotating the phone horizontally does not also rotate the video on the AppleTV, which results in a sideways view constrained within a vertical/portrait orientation.
This is an ongoing issue which has been reported by many users with a variety of iPhone, AppleTV, and iOS versions/combinations. More information can be found in this support thread: https://discussions.apple.com/thread/6650493
If we all submit this feedback, Apple will take notice and fix the issue. Thanks for helping!

Last Saturday (2015/12/5) I called Apple TV´s support. After explaining the issue to the operator he put me trough to a technician. Once he reproduced the issue, he called me back and told me that this is an iOS´s issue that has been on board since iOS 8.
He said he was going to check out with the development team to see whether they are going to fix this bug or not (and leave it as «spec») and will contact me this week. I´m still waiting and I´ll post any update here.
They gave me the impression that they were not aware of this issue.
I live abroad and being able to Facetime my family with a big screen was one of the main reasons of purchasing this Apple TV. Before buying it, I went to an App Store to check if Facetime is working properly, we made a Facetime call test on an iMac and it worked, though we didn´t try the landscape mode (I took it for granted that it´ll work). How wrong was I!

So, as joetweber suggested, the best option is to keep sending feedbacks. Also, calling the support center to get more info would be nice.

I stumbled into this limitation just a few days ago and blamed everything besides Apple because i just couldn't believe they would allow something like this to happen.

As joetweber commented, please submit a report or call the support center.
Right now it seems to be the best way to get this bug fixed; by doing so, they´ll be aware of this issue.

When I saw this thread, I couldn't believe how long this has been addressed by the community.
It works with an iPad, but this doesn't solve it for me.

I Cannot believe they have not cared to fix this issue.
Ive done both feedback and hope they start listening.
