Q: Make an existing Apple ID a child account

I had previously set up an account for my kids but had to give a fictitious birth year to do so. Now with family sharing I want to change the birth year but am not able to do so. Do I need to delete this apple ID and start new?

You will need to create a new account (you can't delete an iTunes account and all downloads done by the account will remain tied to it), child accounts can only be created by a family organiser as part of family sharing : Family Sharing and Apple IDs for kids - Apple Support.
