Can I rename my favorites in Safari on the sidebar so I know what web site it is?
It is hard to tell what web site it is on the sidebar, I'd like to rem=name a few of them so I can identify them easily

Yes. You can edit those folders/files except Favorites folder name.
Click "Bookmarks" in the Safari menu bar and select "Edit Bookmarks" from the dropdown.
When bookmarks appear, tap once to select/highlight (dark blue) then tap again to make the name editable (light blue).
Edit the entry.
