Could be old age, but that's a problem with your particular handset and not iOS 6.

Apple still signs iOS 7.1.2 only for the iPhone 4, because that is the latest version of iOS it's compatible with. iOS 8 is not compatible with the iPhone 4.

Updating does not involve restoring. A backup is a good idea in case something goes wrong, but restoring is not necessary.

That's not a problem with iOS 7.1.2. Just because you are experiencing this does not mean all iOS 7.1.2 users are.
All that being said, my iPhone 4 is still on iOS 6.1.3. I simply do not like the UI changes in iOS 7 and later. But from a performance standpoint, running iOS 7 should be fine, and as mariksmit points out, you'll be able to run more apps, as more and more will require iOS 7 or later. In fact, iOS 7.1 increased performance specifically for the iPhone 4. So if you don't mind the UI changes, I say go for it.
