Can I change the default mail format in iOS?

Hi. I noticed that initiating emails from my iPhone 5 (iOS 7) always results in plain text format on the receiving end. Unless I edit some text to be bold or underlined, then it will default to HTML, which makes sense since plain text does not support enhanced characters. Is there a way to default mail to create messages in HTML?

The formatting is terrible and inconsistent except in my signature. I don't even know how I did it but apparently my signature has a nice clean font similar to Century Gothic but the body of my messages end up with some crappy tiny Times looking font.


Why doesn't apple just display the font they are actually arbitrarily assigning to random parts of our emails? It looks so shoddy and child like. Unprofessional.


How can I make my emails look cleaner and simple and not like some kid or grandma that has no grip on technology?
