All your music you purchased from the iTunes Store will still be saved, the books you purchased from Apple's store will still be saved, any movies you purchased from iTunes will still be saved, and any apps you purchased at the Apple App Store will still be there for you to redownload again. So, pretty much everything you bought from Apple, Apple saves for you.

You should be able to download most of your paid content again.
Download past purchases - Apple Support
BTW... Apple doesn't save anything for you if it is no longer available in the store. If it has been pulled from the stores for any reason, you will not be able to download it again.
