why is there no chat in apple support??

Try clicking on the Applications icon and then iChat will appear from the drop down menu>

Where are you located? There may be no Chat support available in your area. Or the support topic you chose has no Chat support for it.

Also choosing Support for Mac Desktop Computers does not yield Chat options for several topics I tried.

Choosing iPhone I get the Chat option as above.

We are all end users like you so, unfortunately, we have no idea about Apple's wait times or option availability. You'll have to either phone Apple or keep trying from the web site.

It comes and it goes.

I have seen it available then 5 minutes later it is gone then 5 minutes later it is back.

If there are no (or not enough) support personnel available, Chat is not shown as an available option.
