How to play just one song at a time

I have been looking around in iTunes to see how in the heck I can tell it to only play one song at a time when I double click a song in my library (and not the next song). Anybody have any idea if this is even possible? Am I overlooking something?

Thank you for your quick answer, but I knew how to use the Up Next, Clear function. I just think this is annoying, having to click on something else and then click 'clear'. It is extra stuff you have to do in order to just play one song. I want my default double-click action to be 'only play this song and then stop playing'. Simple as that. Is there any way you can configure iTunes to do that?

If you don't use the checkboxes for any other purpose then ctrl+click any checkbox to check/uncheck all visible items. If all items are unchecked iTunes will play any track you double-click on and then stop. As and when you want to listen to an album or a playlist straight through you can make use of the Up Next feature which plays all tracks added to it regardless of checked status.
