Only once i restore my iphone it changes back to the normal grey colour. How can i stop this from happening? When it is black it looks really intrusive and annoying and i'd really like it to stay grey. Can someone explain why this happens and how to fix it? Thankyou.

Not sure why it is showing gray there, as mine shows black there on the white background.
I'm unaware of what you say is a gray icon, but the icon will change in the status bar based on the background color, so it can be recognized. What you say it is doing is normal operation (the back on white background and white on black background).
What i mean is usually the moon icon is normally (and by default) light grey colour but sometimes randomly and permanently until i restore my phone the moon icon goes black or white depending on the background it is on.
I've never seen mine gray in color, unless it has to do with the particular wallpaper you are using. Again, the icon will turn black against a white background. The color is dependent on the background. It shows in contrast so one can see it clearly. I'm not sure why you would restore the phone under this circumstance, but even if there were a slight anomaly in the icon, turning DND off and back on should correct any issue.

Where are you seeing the icon changing color?
In the top right corner where the moon icon is. It goes dark black against a white background and white to a black background.
Do not disturb icon on iphone 5 keeps changing from grey to black
