Larger then 125 Gig HD

I have an Mac Server G4/500 with a couple of drive in it. One of which is a 250 gig unit that, of course, only 125 gig are recognized because of the limits of that platform.

I was wondering if anyone has tried to partition a large drive, by using a firewire enclosure, on a newer model that recognizes larger drives, in to a few smaller partitions. Then placing that now partitioned drive back in to a Sawtooth and have it work?

MBP 15" 2.16/2Gig RAM 120HD Mac OS X (10.4.7)
