Since I downloaded Yosemite Final Cut Express including the manuals are in German. How do I change that into English again?

Try this:
Go to the Apple Menu > System Preferences
Click on Language and Region
In the Pane on the left, make sure only your desired language is listed.
Close System Preferences
Restart your computer
