iTunes U videos show up as audio only in iOS

I have a large collection of how-to videos that I've categorized as "iTunes U" in the media kind options. They play perfectly on my iMac but when syncing them to an iOS device (iPad and iPhones), they show up as audio only and I can't see the video. I'm very Apple savvy, am using all the latest updates, and haven't been able to solve this for over a year.

I use the same conversion / ripping software as my other movies with no issues. When the content is labeled as Movie, TV Show, or Home Video, it works perfectly across all devices. As soon as I change the media kind to iTunes U, all video is lost on my iOS devices and I can only listen to them.
