Changing root user-old user's data, will it remain?

I have a small office. My bookkeeper left and I have a new one using the old bookkeepers computer. I want to change the root user to the new person and I am wondering if by changing the root user name will all the old data stay in place? Will all the old files created by the original root user still work when I change the name to the new root user?
