My iPad has 5.1V OS on it. Can it Be updated to 6.0V OS or higher? If so then how do you accomplish that. also is there a way to find older apps that would work with it??

If you have the original iPad, it cannot be updated past iOS v5.1.1. IPad 2 and newer can be updated to iOS 8.X
As Allan suggests it depends on the exact model of iPad you have.
If it does not have a camera, then it cannot be updated past iOS 5.1.1
If it does it can go up to iOS 8.
With that said, you may be able to get compatible versions of Apps for iOS 5 by downloading the App to iTunes on a computer first, then following this support document from Apple:
