How can I edit table styles?

I’ve upgraded one of my Numbers 09 files to 3.2.2 on my Mac. My old files have labels across the top, none down the left side. When I create a new table all the choices seem to involve labels both top and also on the left.

What would make me happy is if I could use the old layouts to create a new table style and a new border style identical to the old Numbers.
