I upgraded to Yosmite and because my phone is an iPhone 4 this upgrade isn't really of any use to me, I want to know, if I reinstall Snow Leopard will the new version of iTunes work with it?

Did you MacBook ever have Snow Leopard installed on it? If so, use that same install DVD to erase and install Snow Leopard:
Mac OS X v10.6 Snow Leopard: How to Erase and Install - Apple Support
NOTE THAT ERASE AND INSTALL MEANS: ALL THE CURRENT DATA ON YOUR MAC WILL BE DESTROYED!
By the way: no, iTunes 12.x won't work with Snow Leopard:

With Snow Leopard 10.6.8 installed, the most recent iTunes version is 11.4.
