Can I add a checkmark symbol (character?) to a column in Numbers?
I’m trying to use Numbers to track some weekly goals/results. Is there a way to insert a checkmark symbol, to indicate success, in a column?

The Checkbox is a cell format. It can be set in the Format > Cell > Data Format menu.
