Security . . . ensuring only one of my email addresses is used automatically?

I have 6 email addresses of varying security importance.


I use just one for general emails but whenever I create a new message in Mail, it appears that my senders address is chosen at random.


This means I have to remember to check carefully to ensure that one of my more "sensitive" addresses is not used.


Is there any way of making my preferred address the default one so that I never slip up and use the "wrong" ones?

OS X Yosemite (10.10.1), Mac mini i5 2.5GHz & iMac FCP X
