Security . . . ensuring only one of my email addresses is used automatically?

I have 6 email addresses of varying security importance.

I use just one for general emails but whenever I create a new message in Mail, it appears that my senders address is chosen at random.

This means I have to remember to check carefully to ensure that one of my more "sensitive" addresses is not used.

Is there any way of making my preferred address the default one so that I never slip up and use the "wrong" ones?

OS X Yosemite (10.10.1), Mac mini i5 2.5GHz & iMac FCP X

Ian,

Silly question, Have you checked that the option "Send new messages from: " is set to the email you want to use not to "Account of selected Mailbox"?

Mail > Preferences... > Composing ( Tab ) > "Send new messages from:"

Although if you hit reply it will still reply from what ever account you got the email from.

I haven't checked this in the current Mail, but a while back, maybe as far back as Mountain Lion, Mail would only follow that checkbox if you had not moved the message from the inbox. If you did, it would reply using the topmost account in the inbox list.
