Q: How can I subscribe to iTunes Match and have all of my 7,000+ songs on my iPhone?

I bought a 128GB iPhone so I would have room for all my music. Now it's not actually there because I subscribe to iTunes Match. I don't want to have to download it over wifi/cell to listen to it. Should I just unsubscribe from iTunes Match? I don't use if very often.

iPhone 6, iOS 8.1.2

Do you have another device (eg a computer) that also contains your music? If so, yes, you can turn off iTunes match and sync everything with a cable. Do you tend to buy new music from downloads or ripping CDs? If downloads, you can turn on "download purchases automatically" on the phone to make them available to you there, once you've cable-synced your current library. If CDs, you would have to manually sync with cable (or over local wifi) each time you add a new CD.

All of my music is on an external hard drive that I connect to my MacBook when I backup my phone. When I turned off iTunes Match I still didn't have the option to sync via the USB cable.

When I connect my iPhone via the USB cable and go to Music to select the songs to sync, I do not have that option. It just reads, "iPhone can access music in iCloud. Songs can be downloaded and played via Wi-Fi or a cellular network." For new music I download it, so it is not a problem.
