Q: iCloud backup
I have just had my first macbook pro, and when i upload my photos to iCloud then delete them from my pictures folder or the All my files Folder on my Mac, they also dissapear from iCloud.
What is the purpose of iCloud if it doesn't save your photos or documents.
What if i need to do a restore? My images will not be there on iCloud for me to restore and edit

iCloud Drive on a Mac retains a copy in the iCloud Drive folder on the Mac. Delete it from there and it deletes from iCloud. More information on iCloud Drive: iCloud Drive FAQ - Apple Support
iCloud Photo Library is intended for storing photos and keeping them up to date among devices but it is still in beta and a compatible Photos app for Mac Yosemite has not yet been released. iCloud Photo Library beta FAQ - Apple Support
If you want or need a solution where you store photos only in the cloud and don't keep a copy on your Mac I believe you will need to look to 3rd parties. There are a number of possibilities there.
