I just learned that I got a rather large sum of money for my birthday in the form of a digital Apple Store gift card. He told me to check my email and that he sent it. I see no sign of it in the junk or regular folders in my email. He also sent me a screenshot of the email that he sent it to and it looks correct to me. Does it take long to receive in email? or should I be worried that it somehow got lost?

You should get it within 24 hours. I have sent gifts to myself via email and usually get them within an hour or two. The person who sent it to you can send it again. Have them check the email address they are sending it to.
They can go to iTunes and click on Account Info, then under Purchase History, if they click on Manage Gifts, they can see the gift that they sent to you, and edit the email address, and resend.

OK, great. The time it takes depends on the speed of the servers both sending and receiving the email, your Wifi or cellular speed, etc.
If you don't see it in a few hours (or at the latest by tomorrow, let the person who sent you the gift know so they can resend it).
