can i uninstall OS8

since updating phone, some of my 3rd party accessories will not work (iPhone does not support this accessory )

Sorry, downgrading the iOS is not supported by Apple.

Yes, Apple has the iOS software checking if the 3rd party accessory has been made by "trusted" companies. Some "white label" products can damage your device if they were not made to fit the Tech specs.
