I am trying to merge data from Numbers into Pages. When I click on Define as Placeholder Text, the Script ID box does not appear. Am I doing something wrong?

Are you looking on the "More" tab of the Format pane (on the right side of the workspace)?
Pages '09 v4.3 includes native Mail merge functionality. No revision of Pages v5 has this built-in Mail merge support. Apple provided AppleScript support in Pages v5 for those that want to roll their own Mail merge solution. There is a third-party Mail merge solution written in AppleScript that uses Contact groups and Pages v5.
If you are using Pages '09 v4.3, then you must use Numbers '09 v2.3 for the supported Mail merge.
