How do I download my journals?

It sounds like you are concerned with losing your Web Journals when you upgrade your iPhone to iOS 8. According to this article they will be converted to normal Albums in the Photos app when you migrate:

Photo Books, Web Journals, and Slideshows are converted into regular albums in Photos. Text and layouts are not preserved.

Don't want to lose journals when upgrading iOS - any ideas?

Don't upgrade. The journals will no longer work - you will only have a regular photo album. Also your Photo Books will no longer work. The Photos.app is not yet an adequate successor for iPhoto. You will not be able to tag photos or create tagged albums, you can no longer publish slide shows as webpages, and no more brushed adjustments.

If you must update to iOS8, publish your journal as a webpage (See: Publish on the web) and then open the journal in Safari on a Mac. This way you can save at least the webpage with the text as a web archive.
