Preview has many features to alter the document or image but one major issue I am having is that when you edit an image, by for example inserting text, once you save and quit preview you cannot change the text that is inserted? Any solutions??

There is a way to do it, but it requires you to handle the document differently when you enter the text. See the following:
If you add text to an image, you can’t edit, move, or delete the text after you save the image. If you think you’ll need to change the text, convert the image to a PDF document, and then add text to the PDF document.
