There are millions of folks that use Gift Cards without incident.
It seems that you are having extremely bad luck, may be doing something the same way every time that gives the same result or there may be something wrong with your account.
Call Apple Support in the same way you have in the past - but this time, rather than just solve your immediate issue, get them to look into the overall problem of "this happens EVERY TIME" - what am I doing wrong or is there something that you can do to fix this?

Which store's gift card are you trying to use in which store? There are two different types of cards: online Apple Store gift cards (use for purchases of computers, iPads, Accessories, etc) and iTunes/app store cards (use for music, videos, apps, etc).
