Download iBooks onto iTunes on your computer. Open the App Store on the iPad, select the Purchased section and download iBooks. You should be prompted to download a compatible version.

    Take a look at this.

Install the latest compatible version of an app on an earlier version of iOS or OS X - Apple Support

The suggested solution above doesn't always work when you try to download the older version directly on your iPad. Sometimes, you have to download the newest version of the app in iTunes on your computer just so that you have "purchased" the app and have it associated with your Apple ID. Even though you will not be able to sync the newer version to the iPad, you can go to the App Store on the device, tap on the purchased tab, locate iBooks and then tap on the cloud icon to download it. Since it will be the newest version which will not run on your iPad, you will be greeted with a dialog box asking you if you want to download a version that is compatible with your iOS.
