If you don't have a backup then there's noting you can do to restore.
You can re-download stuff that you've purchased in
App Store app > Updates > Purchased > here
iTunes Store app > More... > Purchased > here

You restored your iPod. What is it that you need now?
If you failed to backup your content, then it is gone, unless you redownload from Purchased under quick Links

I have downloaded games off there before

Connect iPod to computer iTunes and update from there.

That model is quite old and can only go to 4.2.1
