If iTunes displays a message that it has stopped working while syncing with an iPhone, there are some additional steps found in this article that may help with the situation:
Trying iTunes in Safe Mode was a good step, and next I'd recommend the steps under the "Create a new user account" section to further isolate the cause of the behavior.
