I can understand it might be frustrating that iTunes opens in a new window and covers the whole screen without an apparent way of closing it easily
It sounds like you have iTunes opening in "fullscreen", which happens if you press the green symbol to the top left in any window.
If you take your mouse the all the way to the top, you should get the menu bar, and also a green symbol. If you press the green dot, you should exit fullscreen mode.

It's asking me if I want to totally delete the movie from iTunes, and no I don't, but I need delete 12 movies to free up disk space on my computer. Can you help me with that?

Movies can take up a lot of room on your mac and I understand you would like to have them removed.
In iTunes you should be able to just choose the movie you want to delete and press "backspace". It prompts that it will remove the movie from iTunes, but as long as it is available for download and you are logged in with the same Apple ID you used to purchase the movie, it should be available in "iTunes in the Cloud".
Movies purchased with you Apple ID will always be linked to that and available for re-download as long as it is not removed from iTunes. I do this from my mac all the time, and re-download them when I want to see them again.

They do not appear as purchased in iTunes when I am signed in. Ugh. Hope I didn't just flush $300 down the toilet.

I am sorry to hear that and I hope you are able to find them. As mentioned earlier movies bought from iTunes with your Apple ID should always be available for re-download as long as it is available in iTunes still.
Are you sure that your are logged in with correct apple ID? Is iTunes up to date?
I would also check if you have hidden your purchases following this article.

Shows all of them on our Apple TV, so we're probably good and I think I can go onto iTunes any time and download those. Thank you SO much for your help!!!
