Everything, or only song names?
iTunes: Changing the display language - http://support.apple.com/kb/HT2242 - "Follow the steps below tho change the language displayed in iTunes and also the language displayed in the iTunes store."
Or, go to the iTunes Store, scroll all the way to the bottom and look in the lower right. Is there a USA icon showing, or a Chinese icon? Chances are it is a Chinese icon. Click it and change to the USA Store. All the displays should change to English.

Menus are all in Chinese. All song and playlist info remains English.
Store is all English. Region is correct.
At first, language suddenly displayed in Swedish. I closed iTunes. When re-opened, it displayed in Chinese.
My system preferences display "Languages & Region". There's no dropdown menu, as per the example. In any case, the display language is set to English.
Try reinstalling iTunes. That means just installing iTunes form the Apple website. it should replace your old iTunes, and your old settings. I do not think content is deleted, but you may wish to check or make a backup.
Reinstalling worked. No back-up needed: content was unchanged.

I did that and it still shows in like Chinese. My albums are in English it is like the tabs and anything you need to choose
