I just installed OS X server and enabled the Cache feature, several days ago. I've noticed that AssetCache is uploading a lot of data, using a significant portion of our total bandwidth. What data is being uploaded? I assumed it would "download" lots of stuff, but I don't know what is going up.

Two of my Sierra Servers started doing this in the last month .. rather worrying.
I don't have caching turned on.
Really don't use them for much; a website to ping off and a couple of emails I rarely use, just testing stuff really.
I recently discovered the same issue. On looking at the config, I found that the caching service had the permissions set to "All Networks".
I changed this to "Local Network Only", and the uploads stopped.
I guess I've been caching updates for users on my ISP for a while!!

I'm seeing this now in (admittedly out-of-date) Yosemite. It has been sending data to an Apple IP address all morning, maxing out my upload bandwidth. Unfortunately the payload in encrypted in an SSL connection, so I can't see what it is sending.
Probably time to upgrade. :-)
