I know how to transfer photos iPhone --> Mac, bit I can't find instructions anywhere for transferring photos Mac --> iPhone, not via USB, which one would think is the fastest and safest alternative.
Running latest Yosemite, all apps up to date + iPhone up to date as well.

Sync the phone to iTunes. Configure iTunes sync for Photos to include the photos you want to transfer. Or you put your photos into iPhoto and simply sync from iPhoto as the source.
Have you tried AirDrop?
Your phone needs to have WiFi and Bluetooth enabled. Then it should appear on your Mac under Finder / AirDrop. You could then drag a file (photo) from the Mac over to the phone.
